Mandarins are harvested by hand from the tree and transported to the processing facility. There, the peel and rind are extracted (the flesh is sold in culinary markets) and placed into a cold-press machine to extract the essential oil. Cold Pressing uses no additional heat, preserving the aromatic compounds within that would be damaged by steam processing.
